Ingredients (Serves 2):
• 1 cup quinoa, rinsed
• 2 boneless, skinless chicken breasts
• 1 cup of chopped tomatoes
• 1 cup baby spinach
• ½ cucumber, diced
• ½ avocado, sliced
• 2 tbsp olive oil
• 1 tbsp lemon juice
• 1 tsp garlic powder
• 1 tsp paprika
• Salt and pepper to taste
• 2 tbsp Greek yogurt (optional, for topping)
Instructions:
1. Cook the Quinoa:
• In a medium saucepan, bring 2 cups of water to a boil.
• Add the quinoa, reduce heat, cover, and simmer for about 15 minutes or until fully cooked.
• Fluff with a fork and set aside.
2. Prepare the Chicken:
• Season the chicken breasts with garlic powder, paprika, salt, and pepper.
• Heat 1 tbsp olive oil in a skillet over medium heat and cook the chicken for 6-7 minutes on each side, or until fully cooked.
• Let rest for a few minutes, then slice into strips.
3. Assemble the Bowl:
• Divide the cooked quinoa between two bowls.
• Top with sliced chicken, cherry tomatoes, baby spinach, cucumber, and avocado.
• Drizzle with the remaining olive oil and lemon juice.
4. Add Finishing Touches:
• Optional: Add a dollop of Greek yogurt for extra creaminess.
• Serve immediately and enjoy!
