Ingredients (Serves 2):

1 cup quinoa, rinsed

2 boneless, skinless chicken breasts

1 cup of chopped tomatoes

1 cup baby spinach

½ cucumber, diced

½ avocado, sliced

2 tbsp olive oil

1 tbsp lemon juice

1 tsp garlic powder

1 tsp paprika

Salt and pepper to taste

2 tbsp Greek yogurt (optional, for topping)


Instructions:

1. Cook the Quinoa:

In a medium saucepan, bring 2 cups of water to a boil.

Add the quinoa, reduce heat, cover, and simmer for about 15 minutes or until fully cooked.

Fluff with a fork and set aside.

2. Prepare the Chicken:

Season the chicken breasts with garlic powder, paprika, salt, and pepper.

Heat 1 tbsp olive oil in a skillet over medium heat and cook the chicken for 6-7 minutes on each side, or until fully cooked.

Let rest for a few minutes, then slice into strips.

3. Assemble the Bowl:

Divide the cooked quinoa between two bowls.

Top with sliced chicken, cherry tomatoes, baby spinach, cucumber, and avocado.

Drizzle with the remaining olive oil and lemon juice.

4. Add Finishing Touches:

Optional: Add a dollop of Greek yogurt for extra creaminess.

Serve immediately and enjoy!
